Favorite Brownies


I just found a new favorite brownie recipe, and I am so excited about it! I already made these twice in the past couple of weeks. These brownies are fudgy and very rich, so a small piece will do the trick. The recipe comes from King Arthur, but I changed a few things to make a vegan version:

1 1/2 cups flour
1 cup cocoa powder
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon espresso powder
1 cup oil
2 cups sugar
1/4 of a block of silken tofu (about 4 oz)
1 tablespoon vanilla extract
1 cup chocolate chips (optional)

Preheat oven to 350°F. Mix the flour, cocoa powder, salt, baking powder and espresso powder in a small bowl. Blend the oil, sugar, tofu and vanilla extract in a large bowl until smooth (I use a stick blender). Add the flour mixture, and the chocolate chips, and mix until combined. Spread into a 9x13 pan lined with parchment paper and bake for 25-30 minutes. Enjoy!
